The Rumblings of a Hungry Man

It started with just a baby gurgle, as we were chatting on the couch. A few minutes later there was another whiny grumble. Then out of the blue a full on tantrum, it sounded like a thunderstorm was inside him yelling..."FEED ME!!!"

I love Leftovers !!

I really really do. Sometimes we eat them exactly as they were originally prepared and other times I transform them into a Leftover Make-Over. Tonight's transformation was from a cooked frozen pork roast from a few weeks ago. Add a bag of frozen stir fry veggies, udon noodles, and a seasoning packet and supper will be served.

A couple of years ago for Christmas my sister bought me a cast iron wok. It is large and heavy, Cowboy complains about it all the time, but I love it and my sister for getting it for me. It was just what I needed to make supper tonight.

Stir Fry Pork with Udon Noodles

Ingredients:

2 cups pork cut into bite size slices

1 bag frozen stir fry veggies

1 package udon noodles (The package that I had, had 2 smaller bags in it. I just used one)

1 Stir Fry seasoning packet follow instructions on package

Oil (I use vegetable oil, but any flavorless oil will work)

Optional Flavorings:

Soy Sauce

Hoisin Sauce

Siracha Sauce

Cooking Utensils:

Sharp Knife

Wok Or large skillet

Large Spoon

Thaw & Rinse veggies in colander and let drain. Slice up pork. Open noodle package and seasoning package. Get water and any other ingredients needed for seasoning package. Have all items next to stove along with a clean serving bowl.

Heat wok or large skillet on high. Add oil and heat until it starts to smoke add in pork and stir around skillet. If you want a crisper fry on your meat you may want to do this in 2 batches. When it is all cooked remove to serving dish. Let wok heat back up add another small amount of oil (1 to 2 tablespoons) and add in the veggies. Stirring when the have been cooking for about 3 minutes move to the edes of the pan. In the middles add seasoning and any liquids that the packet requires miz until all lump are removed then add noodles. Carefully breaking them up as the heat up 2 to 3 minutes. After noodle have broken up add meat back into wok and stir all together. Turn heat to Med High and let cook for 5 minutes. Remove to serving dish.

Serve in bowls and enjoy

We dish our food straight from the stove onto our plates, or into the bowl. Less dishes and there is just the 2 of us!
