We got the $$$$

FINALLY !!

My sister & I applied for a start up loan to get a small sandwich shop / bakery up & running. We had invested almost half of the money in the building & equipment, and all the deposits to get all the utilities set up. We needed a little help from the bank.

SMALL BUSINESS !!

We found a bank that handled small business loans and talked to them. They approved us for the loan, they just need a guarantee from the Small Business Administration (SBA).

I had heard such good things about the SBA, everyone I spoke to about my business asked if we had contacted the SBA.....well let me tell you about that. In our area there is no one to contact about the SBA, oh hold it yes, there is.

THE MAN !!

There is 1 gentleman working out of the college. There is no phone number for him. There is nothing listed on the SBA website. There is nothing listed in the local city development website. He exists and yet, you can not find him.

Once you get his name he is great to work with and very helpful. THANK YOU !! But, the bank had to tell us about him, & we should have seen him before talking to the bank.

IN A PERFECT WORLD !!

We did almost everything backwards, but we had no choice. This lead to a lot of stress and waiting, and waiting, and

WAITING some more. But we survived. Now we are in GO MODE!! We want to get the shop opened as soon as possible, and we have to do some construction, electrical, and plumbing.

We are currently working on the floors. Cowboy and I are doing this as my sister still has her other job. We are removing the old glue from carpet laid over tiles. i think after we get that removed we are just going to paint it, But the removal is not easy... we tried a number of different ways, we talked to several people and tried their suggestions. We wee told there was a machine, but that it would cost us anywhere from 1,000 to 12,000. DOLLARS. YIKES !! But after some phone calls and internet research, I found one we could rent. We would have to do the hard work, but we were more than fine if we could save that type of money. So, a trip the the construction rental company,a lot of hard work, some sore muscles, and hours later AND WE ARE DONE!! Now time to go home and shower & EAT !!!

I think I am in love with this Crock-pot.

Everyone can use a good sauce pan.

QUICK SUPPER !!

After all that work we needed a quick supper. I knew we would be gone all day, but I was not sure how long. I thought about a roast in the crock pot, but we had just had roast. So I decided to make up a casserole that we when we got home I could pop in the oven while we took showers and cleaned up. I was going to make chicken enchiladas, but came up with this instead. We loved it and it is easy!!

Doritos Chicken Casserole

2 chicken breasts cut into bite size pieces

1 cup rice

1/2 onion diced

1 can green chilies do not drain

1 can diced tomatoes do not drain

1 packet taco seasoning

2/3 cup water

2 cup shredded cheese

1 cup crushed Doritos

Cheese Sauce: see short cut

2 tbsp butter

3 tbsp flour

2 cups milk

4 oz cheese cubed up, (cheddar, american, or Velveeta)

Preheat oven to 350°.

In a sauce pan melt butter, add flour, let cooked for a couple of minutes to toast the flour, turn up heat and add milk, stir constantly until thicken. Add in the cheese and take off heat. Now add into the cheese sauce the onion, chilies, tomatoes & 1/2 the taco packet mix it all together.

Spray a 9 x 13 baking pan with oil, add rice, water, and chicken to baking dish, sprinkle with remaining taco packet strir together and then spread out in pan.

Sprinkle with 1 cup shredded cheese, pour cheese sauce over the chicken, rice, & shredded cheese. Top with crushed Doritos. Cover and bake 45 minutes. After 45 minutes take cover off add rest of shredded cheese and bake 15 more minutes. Remove let sit 5 minutes and serve with a side salad, and any topping you like on your Mexican food, sour cream, salsa, lime, or guacamole.

Short cut: Instead of making the cheese sauce from scratch, you could use a family size can of cream of chicken soup, heat it up up to melt the cheese and then add the chilies, onions, and seasoning.

CONFESSION !!

The photo is not the best, I left it in just a little too long after I added the shredded cheese. The phone rang & I got side tracked. Oh well that is real life cooking. Still tasted amazing and it was still gooey.
